Vegan Nachos
My go-to easy comfort food
These Nachos are the perfect dish for a dinner when you want something dirty but they can actually be quite healthy!
First of all get your red lentils on to simmer, I usually boil them in the frying pan for about 20 mins. You can also use vegan mince to make it more like the real thing.
While the lentils are cooking finely chop an onion, red pepper and a a large clove of garlic. add these to the frying pan as soon as the lentils have after 10 to 15 mins when the lentils have soaked up the majority of the water.
Next I like to grate a whole carrot and a half of a courgette into the pan to add some more nutrition.
Now to season the mixture with salt, black pepper, paprika, chilli flakes and garlic powder. I also use green Tabasco for an extra kick or sometimes I'll add in some BBQ sauce.
Next I add in a can of black beans (drained) and a can of chopped tomatoes. I let all this simmer while I pre-heat the oven to 180 C and arrange my tortilla chips into an oven dish.
I use vegan grated cheese and sprinkle in over the chips liberally, then add the chilli mixture over the cheese and chips. I then top it all over with more vegan cheese and pop it into the oven until the cheese is melted nicely.
For my finishing touches I smash an avocado with some salt, pepper, chilli flakes and lemon juice and spread this over the nachos along with some jalapenos and drizzle some vegan mayo all over!
